pH Levels

The term pH actually means potential of hydrogen or, the number of hydrogen ions in a substance. The higher the number, the more acidic the substance. The lower the number, the more alkaline the substance. A pH of 7 is neutral, neither acidic nor alkaline. In order to remain healthy, the body must maintain an overall alkaline pH in the range of 7.36 to 7.45. A balanced diet is generally composed of about 75 to 80 percent alkaline foods and 20 to 25 percent acidic foods.

While these pH facts are interesting, you may be wondering what all of this has to do with the raw or living food lifestyle. For one thing, the more acidic we get, the less life force energy we have in our bodies, because we are taking in less oxygen. Raw foods have an ability to restore and maintain the pH balance of our cells. Some of the reason for this is simply that food, in its uncooked state, is less acidic.
